I tried at least 4 other recorders, and all took a LONG time to open, and often just crashed. Somehow this one opens almost immediately, and so far has been working great! I also like how it starts recording immediately, and gives you a haptic to let you know.

(*I am not sure what I did to get this working. I deleted and reinstalled 3 times on the watch and once on the phone. Then I shut both watch and phone off and restarted. At some point something clicked and 'JPR' started working perfectly.).
